Stuffed pepper

Stuffed peppers, Sacher-style

Originally it was Christoph Columbus who brought the pepper from South America to Europe and was responsible for its spread. Like the tomato the spicy fruit was at first popular as beautiful ornamental plant. It was not until the 17th century that it became an alternative to the more expensive black pepper and therefore mostly appreciated amongst the poor population. In the Viennese cuisine pepper is used very often. Especially favored and artful is this recipe tip: Stuffed peppers!

Servings: 4

Ingredients:

  • 4 red peppers
  • 300 g (0,7 lb) potatoes
  • 4 small shallots, peeled and chopped
  • 300 g (0,7 lb) Braunschweiger sausage (cubed)
  • 3 tbsps cheese (grated)
  • 100 g (1/2 cup) sour cream
  • 1 egg
  • 1 cooking spoon fresh marjoram, finely chopped
  • 2 tbsps parsley (chopped)
  • 1 tbsp capers, finely chopped
  • tabasco sauce
  • 6 very ripe tomatoes
  • 2 tbsps sugar
  • 2 fresh bay leaves
  • 5 tbsps olive oil for frying
  • 2 tbsps pork dripping (melted) or vegetable oil
  • salt
  • ground pepper
  • caraway seeds (whole)
  • ground nutmeg

Here is your recipe for this Viennese delicacy:

Wash the peppers and cut off the caps. Remove the seeds and white flesh. Also remove these from the caps of the peppers, and fashion a round lid. Cut the potatoes in 4mm cubes and sauté with shallots in the olive oil. Season with salt, pepper, caraway seeds and nutmeg and add about 300 ml water. Steam for about 10 minutes. As soon as the water has evaporated, add the sausage. Stir well.
Stir in the sour cream, marjoram, parsley, capers, egg and cheese, and season with pepper and salt. Fill the peppers with the mixture, push down well, and place the lids on top.
Brush the peppers with dripping or oil and place on an ovenproof pan or dish. Mash together the tomatoes, sugar, bay leaves, salt, and a shot of Tabasco and add to the dish. Preheat the fan-forced oven at 180 °C and bake for 40-50 minutes. While the peppers are baking, stir the sauce repeatedly. When the peppers are tender, remove from the oven and place on a warmed plate. Purée the sauce and let simmer for a little longer if necessary. Pour over the stuffed peppers.
