Stuffed breast of veal, Viennese style

In Vienna veal has always belonged to the fine, exquisite types of meat. Therefore, in the 19th century it was often served on Sundays or holidays. Today Viennese cuisine still has to offer many dishes made with veal. Doubtlessly, the most famous one is the Viennese Schnitzel. But you should definitely try the Viennese stuffed breast of veal. Maybe already for dinner this evening?

Servings: 8 - 10 servings

Ingredients:

  • 1 pocketed breast of veal, approx. 3 kg (1/4 qr)
  • bones (from the breast, finely chopped)
  • 500 ml (0,75 pt) veal juice
  • 400 g (1 lb) Kaisersemmeln (type of white bread roll)
  • 500 ml (0,75 lb) milk
  • 100 g (1/2 cup) butter (melted)
  • 6 eggs
  • 1 tbsps parsley (chopped)
  • nutmeg (ground)
  • ground pepper
  • salt
  • butter (for frying)

Here is your recipe for this Viennese delicacy:

Wash the veal breast and pat dry with kitchen paper. If necessary, widen the pocket opening by hand or with a cooking spoon. Pour the milk into a bowl and soak the bread roll cubes. Squeeze them out and mix well with melted butter, eggs and chopped parsley. Season with nutmeg, pepper and salt. Fill the veal breast with the stuffing using a spoon. Push firmly into the cavity using a fist. Tightly sew the opening with thread. Rub the outside well with salt and pepper.
Place the chopped bones into a baking dish and put the breast of veal, upside down, on top of the bones. Distribute some generous flakes of butter over the meat. Roast in a preheated oven at 200 °C (400F) for about 15 minutes. Baste with the juice, reduce heat to about 160 °C (325F), and roast for another 30 minutes. Turn the breast over and roast for 1 1/2-2 hours Baste regularly, adding a little water if necessary. Remove the meat, wrap in greaseproof paper. Leave it to stand for at least 30 minutes in a warm place. Pour about 250 ml (0,4 pt) water into the meat juices, mixing in any residue from the dish and simmer well. Drain the fluid. Carve the meat, and place the slices on warmed plates with a little juice.

Cooking time: 2 ½ - 3 hours
